I'm from St. Louis. The home of Gooey Butter Cake. Many people think it's a Paula Deen creation, and how could you not when you see how much butter is in it, but you can't go in to a restaurant, bakery or grocery store without seeing gooey butter somewhere in St. Louis. We love it. What's not to love with butter, cream cheese, powdered sugar, oh my!
But, considering I've made it numerous times, I'm always up for a new variation. Nutella? Check! Cookies? Don't mind if I do! Pumpkin? Well of course! While talking to my mom about what to bring to a family function, she mentioned she saw a recipe for key lime gooey butter cake. Sold! I've never heard of the website she sent over to me, but it looked similar to the basics of every other recipe I've used for Gooey Butter Cake so I knew I wanted to give it a try!
One thing people may not realize is that Gooey Butter Cake is very easy to make. Just a few ingredients really! Just mix them, bake and cool. Easy as pie (or cake, in this case!)
The lime is subtle, but still noticeable in this cake, but you could certainly add more or less juice or zest to your tastes - it's not enough liquid to affect the texture of the filling!
Key Lime Gooey Butter Cake
For the Cake -
1 stick of melted butter
1 box yellow cake mix
For the filling -
1 stick of butter, softened
8-oz. cream cheese, softened
2 cups powdered sugar
Juice of 4 key limes
zest of 1 key lime
Preheat oven to 325F and lightly grease a 9x13" pan
For the crust, mix melted butter, egg and cake mix until well incorporated. Press to the bottom of greased pan with fingers.
Using an electric mixer, blend softened butter, cream cheese, 2 eggs and lime juice and zest. Slowly add powdered sugar and beat until smooth.
Pour filling mixture over crust. Bake for 45 minutes, or until edges are golden. Do not over bake - the center should still be a little gooey!
Cool and dust with powdered sugar (and extra lime zest if desired).
