Pumpkin Pie Dip

Pumpkin - it's that time of year again.  Every fall I crave pumpkin foods, and every fall I struggle to come up with recipes to make because Rob isn't a fan.  Of course I can take things in to work, but we have lots of sweets in our breakroom. GOOD sweets at that, so I don't really need to contribute to departmental weight gain.  But, when the occasion strikes to bring in a dessert I will!  And if it's the fall, you bet I'm bringing something pumpkin! When I got the calendar invite for a coworkers shower to celebrate her baby boy that will grace us in a few weeks, I jumped at the chance to bring a dessert.  A few desserts were already planned, so I wanted something relatively simple.  It didn't take long to land on this pumpkin pie dip I'd been seeing on Pinterest. Cocoa Krispie Treats

Can you believe that I am 30-years-old and I've never made Rice Krispie Treats?  The simplest thing in the world to make, that toddlers can make them (with adult help on the stove, that is), and I've never made them!  Why you may ask?  Well, to be perfectly honest, I'm not a huge fan of Rice Krispie Treats.  Never really have been for some reason.  I've always found them to be too dry and boring.   Every time I tell someone I'm not a fan, they look at me like I have a few heads.  Rob included!  Rob loves them, and when he asked me to make some with Cocoa Krispies for a family reunion I figured, "sure, why not.  I don't really have a lot of time to make much, but of course I'm taking something."  While at the store I picked up the ingredients I needed, all two of them, and whipped these up while preheating the oven for dinner.   I still don't really like regular Rice Krispie Treats, but made with Cocoa Krispies - yes please!  These

Classic Beef Chili

It may have taken me awhile, but one day I realized that chili with beans is not bad, in fact, it's delicious!  Growing up I always just thought I didn't like beans, and one late night in college, Rob (my then boyfriend) encouraged me to try his chili at Steak n Shake.  I did.  And I liked it!  And it had beans in it!  Who knew? That's not to say I was an instant Chili-Lover.  But after Rob and I got married, I needed some new recipes that I knew he'd like - chili being one of them.  Though I now liked chili (with beans - previously I loved the canned chili without beans!), it's not like I craved it.  Rob did though.  So being the ever loving wife that I am, I asked my mom for her recipe, and made it up one day.  Rob loved it and it became a classic cold weather go-to in our house, and eventually I began craving it myself!
