First Menu Plan of 2010

Albeit, not an exciting one. Since it's the beginning of the year there's no doubt that I'm trying to eat healthier, much like probably 75% of everyone else out there! However, with that being said, I'm not going to try to jump straight on to only eating healthy foods because I know that by adopting that kind of diet I'll set myself up for failure. Instead, I'll make sure most of my meals are of a healthier fare and concentrate more on working out and leading a more active life in general this year.

S: Burgers on WG buns, Roasted Potatoes
M: Oven Baked Chicken Parmesan, WW Pasta and Green Beans
T: Grilled Cheese and Soup (WW Bread, 2% cheese)
W: Fresh Salad with Grilled Chicken and Slivered Almonds
R: Sloppy Joes (with a turkey/90% lean beef mix - can't switch too much on DH) and Green Beans
F: Chili (with same turkey/90% lean beef mix)
S: Baked Lemon Thyme Chicken, roasted veggies

As far as workouts go, I'm trying to get in to a routine where 3-4 days a week I use the treadmill and work on my abs and 3 days a week I'll do a workout from my husband's P90X DVDs. I can't commit to doing those dang videos 6-7 days a week so I'll just pick and chose what I want to do based on what I need to work on, how much time I have, etc.

Nutella Cannoli

Nutella is something that I love, but honestly don't really eat or bake with that often, always regretting that fact each time I eat something with Nutella. Well, I am vowing to change my ways - starting with these Cannolis!  They're definitely not a traditional cannoli as the combination of cream cheese and whipped cream make them more like a cheesecake filling, or even mousse, but the cannoli shell makes them easy to grab and eat.  No fork required - my kind of dessert!

Usually I prefer to make mini cannolis because sometimes full ones are just too rich for me, however any recipe could easily be adapted to a regular cannoli shell size (or mini size if the case may be).  The combination of the cream cheese, whipped cream and Nutella definitely made these a rich bite-size dessert, that I think may become one of my go-to recipes when I need to make something quick and impressive.

Key Lime Gooey Butter Cake

I'm from St. Louis.  The home of Gooey Butter Cake.  Many people think it's a Paula Deen creation, and how could you not when you see how much butter is in it, but you can't go in to a restaurant, bakery or grocery store without seeing gooey butter somewhere in St. Louis.  We love it.  What's not to love with butter, cream cheese, powdered sugar, oh my!

But, considering I've made it numerous times, I'm always up for a new variation.  Nutella?  Check!  Cookies?  Don't mind if I do!  Pumpkin?  Well of course!  While talking to my mom about what to bring to a family function, she mentioned she saw a recipe for key lime gooey butter cake.  Sold!  I've never heard of the website she sent over to me, but it looked similar to the basics of every other recipe I've used for Gooey Butter Cake so I knew I wanted to give it a try!

One thing people may not realize is that Gooey Butter Cake is very easy to make.  Just a few ingredients really!  Just mix them, ba…

Classic Monkey Bread

For a few years I made monkey bread muffins for Christmas morning, and for some reason I got out of that habit. Then we had kids and I thought I'd get back in to it, but I didn't until recently. But I recently made classic loaf Monkey Bread and realized that it's just better than muffins. It's not like a loaf is any less "complicated" to make, or really tastes different, but there is something easier about it. And I haven't had a single loaf bubble over and cause a mess in my oven!

I'm so happy to have brought this back in to our lives. Not that it takes long to put together or bake, but this is the perfect lazy weekend (or Christmas morning) breakfast. I have even started the process in advance before, by cutting the biscuits and measuring the sugar and cinnamon in a bag the night before. After all, the biscuit cutting is the most time consuming part. Wake, assemble, and voila!

Do you have a big crowd to feed, or kids that devour sweets? Simply doubl…
