Thin n' Crispy Pizza Crust

We eat a lot of pizza.  A LOT, a lot!  Lately it's been frozen because I've been lazy, however I'm starting to get back in the swing of things, though I still want pizza.  Again and again (and again...)  I haven't made my own pizza crust in awhile because we're big fans on thin crust in this household ( St. Louis style pizza to be more specific) and I haven't found a good recipe for thin crust - until now.  I didn't think I'd be able to get it as thin as we like but this was pretty darn close (one side of the pizza was perfect, the other side a little thicker because I was rushing).  For being so easy to make the results are fantastic!  This is definitely my new favorite pizza crust recipe, now all I need is a perfect sauce recipe! Chicken Thighs in Riesling

In the winter most people want warm, comforting foods, and there is something about Sunday dinners.  My sister-in-law sent me this recipe and I immediately started planning on when to make it.  It seems like the perfect Sunday dinner but our Sunday dinners have been frozen pizza or something as quick and easy to make because my husband has had in-door soccer games.  I finally got to make this and I really liked it but the husband didn't seem too wowed.  First of all, he doesn't like when the vegetables are mixed in with the meat (so that means he doesn't really like pot roast, stews, pot-pies, etc.) which is a bummer for me because I love those kinds of meals, and secondly, neither of us really eat dark-meat chicken.  Overall I still think this recipe was a winner, despite how picky we are.  Although, next time I may make it with B/S Chicken Breasts, just because that's what I prefer.  Chicken Thighs in Riesling Source: Everybody Likes Sandwiches  (as adapted from G

Almond Banana Muffins

I haven't been in a big mood to bake much lately.  This is probably because I haven't had a reason to and therfore whatever I bake I'll eat, negating my "diet".  With this being said however, I had three bananas on my counter that I didn't really think about until they started browning too much for my taste.  It's pretty much a no-brainer what to do with the bananas if I didn't want to throw them away - banana bread or muffins.  I do love banana bread, but my husband does not.  Though easy to freeze, muffins are easier, and individual!  Plus, they make a great, quick breakfast to grab on my way out the door. Albeit, not an exciting one. Since it's the beginning of the year there's no doubt that I'm trying to eat healthier, much like probably 75% of everyone else out there! However, with that being said, I'm not going to try to jump straight on to only eating healthy foods because I know that by adopting that kind of diet I'll set myself up for failure. Instead, I'll make sure most of my meals are of a healthier fare and concentrate more on working out and leading a more active life in general this year. Happy New Year (and New Blog?)

First of all, I have a lot of things that I still want to blog, however I've been nursing holiday prep, the holidays themselves and then the flu the last few weeks (the flu was just the last few days thankfully).  This post is just to let the few of you that follow me know that I haven't given up my blogging, I've just been insanely preoccupied lately.  Honestly, I'm looking forward to being lazy the rest of the week so don't expect anything too soon! Another thing, with ringing in this new year I've decided to make a few tweaks to my blog.  I'm not the most tech savvy so bear with me while I try to figure out what I want to do, and subsequently how to do it. With all of that in mind - HAPPY 2010!!
