Menu Plan Monday

Let's see - what are we having this week? Nothing too spectacular it appears. One of these days I'll be able to take some time to actually plan out meals, prepare some things in advance, etc. When that will be though I have no idea. Fall maybe?!

Anywho... S: Pizzas (made 2 small pizzas - perfect for each of us to have 2-3 slices and then some leftovers for work today!)
M: Burgers and Fries
T: Velveeta Chicken - I've been on a velveeta kick lately... )this is basically just Velveeta Mac with Chicken)
W: Hamburger Helper - I think I'll have DH make this - simple enough, right?
R: Grilled Chicken and Pineapple Kabobs
F-Sa: we think we'll be out of town, helping a friend move across state.

Beach Party Cupcakes AND 100th Blog Post

I saw these cupcake pops on Bakerella's site and just knew I had to use the idea sometime. When thinking about something fun to make for 4th of July I thought about something summery that the kids would enjoy so obviously a cute cupcake would do the trick and what's more fun in the summer than fireworks and swimming? Not much, I'll tell you that! Knowing that everything is fireworks galore on the 4th I decided to go the swimming route and make these cupcakes. Not only were they adorable, it really only took an extra 10 minutes to decorate than if I were to frost a plain-jane cupcake. Surf's Up! (aw man, I wish I had made some surfin little dudes! I'll have to remember that for next time!)

1 recipe favorite cupcake frosting (another coconut lime, without the coconut flakes)

"Toasted" Canneloni

I'm from St. Louis. It's hard to go to a local restaurant (that serves appetizers) that does not carry Toasted Ravioli. For those of you that don't know what toasted ravioli is, it's just breaded ravioli (typically meat filled) that is deep fried and delicious. Anyway, a few weeks ago I went to a local pub with co-workers and on the menu was Toasted Canneloni. I'd never seen this before, or maybe I just hadn't noticed because normally I don't get appetizers, however I had to try these. Just as delicious they were!

Since I make the toasted ravs at home a lot I figured I could make these as well. I already planned on making canneloni/Manicotti (I usually make a combo of both meals) the next week so I figured I'd just freeze the leftovers for when I was ready to make the fried version. Funnily enough, that weekend on Big Daddy's House, Aaron made a similar recipe to what I was planning to do, only calling his recipe Fried Lasagna Bites. At the end of th…
