Oven Baked Honey Chicken Tenders

Honey and Chicken is one of mine and my husbands favorite combinations. It's always funny to me when we go to a grill type restaurant and one of us orders Chicken Tenders (ok, ususally both!) and ask if they have honey and the wait staff looks at us like we've had too many beers. Nope, I've had a few sips of the beer you just brought me - it's just an awesome combination! When I saw this recipe in Molly's blog I knew I had to try it. Not only was it simple, but it was fantastic. Can't go wrong with that!

Oven Baked Honey Chicken Tenders

Ingredients
1/2 c. honey
2 tablespoons balsamic vinegar
1 1/2 cups dried breadcrumbs (I used WW Panko)
~ 1 lb. fresh BS Chicken Breast, cut in to bite size pieces (I cut in to tenders)

Creamy Mac & Cheese

I love mac and cheese... like LOVE it. I don't care if it's the kind from a blue box, a 4-star restaurant, whatever - I'll eat it. My husband however prefers the boxed kind because it's so creamy and cheesy. It's hard to argue that, however as I've said, if it's mac and cheese, I'll eat it! I've been searching for a creamy, cheesy mac and cheese recipe for years that my husband will approve of, rather than say "why don't you just make a box?" So, I decided to go with the creamiest cheese known to man - Velveeta. (Well, wait, is that even actually cheese?) To offset the velveeta I used a WG pasta :) Anyway, I ended up using the recipe from the back of the box and I must admit - it was AMAZING! My husband actually said so.

Ingredients
2 cups, uncooked pasta (Used Whole Grain Medium Shells)
12 oz. Velveeta Cheese, cubed
1/3 c. milk

Picky Eater Grilled Chicken Wrap

I always want to order wraps when I go out to lunch but I am so picky that I'd feel like I'm high maintenance by asking for xx wrap, hold the dressing, salsa, etc. so I never order them. I don't know what's kept me from making them on my own before. This was so easy and perfect for a quick, simple dinner. I do think my tortilla's were on their last leg though because they were a little dry and therefore didn't wrap too well. Taste wise it was perfectly fine though!

As I mentioned, I'm picky, so this is just the meat and potatoes (well, rice in this case) of a wrap. It can obviously be tweaked however desired.


Ingredients (for 2 wraps and a nice sized "burrito bowl" lunch)
- 1 cup brown rice, cooked
- 1 tablespoon lime juice
- 1-2 BS chicken breasts, depending on size
- ¼ c. olive oil
- 2 cloves garlic, pressed
