I've Been REALLY Bad and Lazy!

I just wanted to apologize to anyone that reads my blog - I've been horrible lately. Not that I want to make excuses, but I will...

A.) I've been busy at work, at a computer more than normal and the last thing I want to do when I get home is stare at a computer, B.) I really haven't made too much that's blog worthy. I've made some stuff and I've got a list of things to blog about evenutally but I haven't been inspired, C.) I switched google accounts and it's too annoying to switch between accounts and I JUST figured out that I can add my new account to my blog. I'm not computer savvy - I know! and... D.) I'm just lazy.

Anyway - the good news is that I've got a wedding shower this weekend that I'm baking for and another one the following weekend that I'm throwing with other bridesmaids and I'm doing all of the desserts so I'll have a lot to blog about in the coming two weekends. Check back soon!!

PS - I guess I can post what my menu has been this week so this is at least somewhat cooking related:

Su: ordered pizza (went out of town for a wedding and we were a bit hungover)
M: Chicken Club sandwiches and macaroni
T: Leftover Lasagna from the freezer
W: DIY pizzas - DHs was meatetarian and cheesy, mine was with a garlic olive oil sauce, lighter on the cheese and canadian bacon
R: going out with friends to watch basketball - Go Mizzou!!
F: Tacos
S: Mini Burgers and Potato Slabs before the hockey game. Go Blues!! (I'll be spending my day baking a cake for Sara's shower #1/4.)

Key Lime Gooey Butter Cake

I'm from St. Louis.  The home of Gooey Butter Cake.  Many people think it's a Paula Deen creation, and how could you not when you see how much butter is in it, but you can't go in to a restaurant, bakery or grocery store without seeing gooey butter somewhere in St. Louis.  We love it.  What's not to love with butter, cream cheese, powdered sugar, oh my!

But, considering I've made it numerous times, I'm always up for a new variation.  Nutella?  Check!  Cookies?  Don't mind if I do!  Pumpkin?  Well of course!  While talking to my mom about what to bring to a family function, she mentioned she saw a recipe for key lime gooey butter cake.  Sold!  I've never heard of the website she sent over to me, but it looked similar to the basics of every other recipe I've used for Gooey Butter Cake so I knew I wanted to give it a try!

One thing people may not realize is that Gooey Butter Cake is very easy to make.  Just a few ingredients really!  Just mix them, ba…

Nutella Cannoli

Nutella is something that I love, but honestly don't really eat or bake with that often, always regretting that fact each time I eat something with Nutella. Well, I am vowing to change my ways - starting with these Cannolis!  They're definitely not a traditional cannoli as the combination of cream cheese and whipped cream make them more like a cheesecake filling, or even mousse, but the cannoli shell makes them easy to grab and eat.  No fork required - my kind of dessert!

Usually I prefer to make mini cannolis because sometimes full ones are just too rich for me, however any recipe could easily be adapted to a regular cannoli shell size (or mini size if the case may be).  The combination of the cream cheese, whipped cream and Nutella definitely made these a rich bite-size dessert, that I think may become one of my go-to recipes when I need to make something quick and impressive.

Foodbuzz 24x24: A Very Hungry Caterpillar First Birthday Party

It's hard to believe that my baby boy is technically no longer a baby anymore!  It seems like just yesterday I was a nervous wreck on our way to the hospital, and now all of a sudden I'm planning a birthday party!

Even before Ty was born though, I knew I wanted to do a Very Hungry Caterpillar party.  I'm not exactly sure what made me think of it, but one day I was sitting in his room and imagining reading him the first book I bought for him.  Yep - The Very Hungry Caterpillar!

There is something about the classic children's book that lends itself very well to entertaining.  Generally speaking, the focal point of any event (aside from the reason for celebration), is the food.    For those not familiar with the book - The Hungry Caterpillar is all about food!  He eats is way through many different foods, until he's big and strong and becomes a beautiful butterfly.  A perfect metaphor for a young baby.  It's amazing how much such a little guy can eat - but at th…
