Tortellini and Chicken

I've been so uninspired lately, but I must admit, though super simple, this was a fantastic combo! Not having much in the house to cook, but refusing to go grocery shopping until the weekend, I whipped together something (in my opinion) AMAZING! Tortellini with a light cream sauce and chicken. This was an adaptation of a Tortellini I make occasionally (recipe courtesy my MIL), but I didn't have all of the regular ingredients so I improvised...

Ingredients
1/2 lb frozen cheese filled tortellini
2 b/s chicken breasts
1/2-3/4 cup half and half
1/4 cup parmesan cheese
2-3 tablespoons of butter
S&P
(normally I'd add proscuitto and peas instead of chicken)
Directions
- chop chicken in to 1" cubes and sautee in large skillet with a little EVOO
- cook tortellini in boiling water for about 5-7 minutes, until tender

Mother's Day Brunch Recipes

So, I FINALLY get to have people over for something other than having friends over to play Wii. While I love Wii, I've really been needing to have "adults" over for once! So far here is my Mother's Day Brunch Menu. I'm kind of breaking it down in to two "mini meals" - one more morning-centric, the other more lunch-style. Also, I should point out that my family is in no way "foodies". While we enjoy trying new things (or, I should say they because I'm very picky!), they don't stray too far from success when it comes to family meals - I hope they're OK with the scones I'm making!

Morning
- Sausage and Egg Casserole (my husbands request - though it's not his holiday!)
- Scones (Ham & Cheese and Cinnamon)
- Fruit (salad? Platter? Skewers?)
- Apple Butter Banana Bread (Cannot wait to try this, it sounded awesome!!)

Lunch
- Stuff to make sandwiches (Breads, Ham, Turkey, Salami, Swiss Cheese, Cheddar Cheese, Mayo, Mustard, Lettu…

Spicy Chicken Sandwich

So, it's been almost a month since my last post - yikes! The truth is that I've been completely uninspired and on top of that - BUSY!!! There are only a few things that I can think of that I could blog about (sadly, most of what I've had the last 4 weeks is either prepackaged, take out or work meeting meals... So, let's see...

Fake-Out Wendy's Spicy Chicken Sandwich
Though this is SOOOO bad for you, it's SOOOO good. My husband and I love Wendy's Spicy Chicken but we don't have Wendy's in our city anymore so I searched for a recipe online and found it on many websites.

Ingredients(6-8 cups vegetable oil
1/3 cup frank's original red hot pepper sauce
2/3 cup water
1 cup all-purpose flour
2 1/2 teaspoons salt
4 teaspoons cayenne pepper
1 teaspoon fresh coarse ground black pepper
1 teaspoon onion powder
1/2 teaspoon paprika
1/8 teaspoon garlic powder
