Mini Cheesecakes

So, one day my husband called me asking if we had enough ingredients at home to make something... that's all, make something. What that something is I have no idea! It turned out that at work they all decided to bring in foods to snack on throughout the next day because they'd been so busy. Did he want some kind of dip, a dessert, a side dish? I had no idea. The only thing I KNEW I had the ingredients to make would have been chocolate chip cookies.... well, as I was on the phone with him someone signed up to take cookies so that was out.

I have always wanted to try these little mini cheesecakes I saw in a Nestle Toll House baking ad in a weekly coupon circular. I had long let the coupon (buy one, get one) go expired but I still had the recipe sitting in my "to try" file...

I didn't get to try any of these but apparently they were great. There are a few things I'll do differently when I make them but I'll definitely make them again!

Spaghetti with Stuffed Meatballs

So, eventually people may start to notice a trend in my posts... I LOVE cheese and I love pastas, especially meaty pastas. A long time ago I saw a recipe in Everyday with Rachael Ray that I was intrigued by: Mozzarella Stuffed Meatballs. Here are a few things on my favorite foods list:
Spaghetti - check
Meatballs (or meat sauce) - check
Cheese - check
Ice Cream - that would just be gross!
Diet Dr Pepper - as my drink, check!
Tacos - the night before, check!


Anyway, you get the picture... this recipe incorporates some of my faves so when I saw it surface on What's Cooking I couldn't believe that I had completely forgotten about it over the last year or two! What was I thinking?!?!

These are going on my favorites list!! SOOO GOOD!!

Valentine's Day - Heart Shaped Pizza!

Ever since our first Valentine's Day together (2001) my boyfriend, then finance and now husband and I have had pizza for dinner on almost every v-day. I just don't usually get too in to Valentine's Day, probably because my birthday is 3 days before!

Anyway, why would this year be any different? In a way it was. This was our first Valentine's Day in our home. Because of that I could have made a nice, fancy meal but why mess with success!

For the first time on Valentine's Day, however, I did make my own pizza, rather than calling Pizza Hut!

To be all cutsey I decided to shape the pizza like a heart. I didn't think I would be able to because I have a hard enough time shaping the pizza dough like a pizza! I was plesantly surprised at how easy it was! I will post pictures soon... I don't have the pictures on my work computer!

Superbowl Recipes

Oh my, I've been SOOO busy lately so I'm just now FINALLY getting to update my blog some. Well, we opted out of a friend-friendly Superbowl party as initially planned because after hanging out with friends so much we were starting to get sick of it. Instead we just had our parents (and my Sister-in-Law) over for a super casual Superbowl "party". Just the basics: Chili, Wings, Macaroni and Cheese, some cheesy breadsticks, chips, pretzels, dip, brownies, beer, soda and water...
