So, after baking with my family on Friday, I sort of baked on Saturday and Sunday... candies that is! At work everyone kept saying, "no cookies, no cakes...nothing" but I couldn't not bring nothing (wow - bad grammar but it works here!) so I decided to make a few candies for my immediate team to nibble on. To ward off the "Ughh... we said no" comments I gave everyone a little baggie of two kinds of candies - that's all! I made Peppermint Bark and Graham Cracker Pralines. Everyone raved on Monday when I brought them in.
Peppermint Bark
*SUPER easy and just as yummy!!

*SUPER easy and just as yummy!!

Ingredients
(1) bag mint chocolate chips
(1) bag white chocolate chips
(12) candy canes crushed (can use any crushed mint candies... these were just in the baking aisle already!)
Directions
- In a double boiler (or makeshift as I did!) melt mint choclate chips
- spread melted chocolate on a parchment paper lined cookie sheet and let cool
- After 1st layer cools, melt white chocolate in double boiler (or makeshift!) and add in crushed peppermint candy
- spread melted chocolate and peppermint over mint chocolate layer
- cool
- break in to pieces
** there are numerous ways you can make this... I think next time I'll finely crush the candy and sprinkle it on top of the white choclate layer so it'll be like 3 layers!
Graham Cracker Pralines

(16) whole graham crackers (original recipe calls for 24 but my pan didn't hold 24)
(1) cup butter
(1) cup firmly packed brown sugar
(1) cup finely chopped pecans
Directions
- preheat oven to 350
- spread graham crackers on a parchment lined jelly-roll pan
- bring butter and brown sugar to boil in sauce pan
- boil for exactly 1 minute
- add in chopped pecans
- spread evenly over graham crackers
- bake for 10 minutes
- place pan on wire rack to cool
- break in to pieces
* I usually make a little more of the butter/sugar mixture so that it's easier to spread.
